Agree with Randy above - limiting choices to a handful reduces sensory overload.
Offering high value will bring people in the door the first time but trying a twist or personalization on popular/main stream dishes allow consumers to take baby steps out of their comfort zone which will lead to repeat business and more adventurous future tastings on your menu.
For example, in Silicon Valley we have a very multi-ethnic population. There's a pizzaria that has traditional toppings like cheese and pepperoni, but they also have non-traditional toppings like Indian butter chicken which attracts the more intrepid foodies. Something for everyone but also something familiar.
