As food and beverage have evolved to include audio visual garnishes; molecular gastronomy is in; fusion cusines on the rise, what happens to basics like immaculate silver serivce and finger licking good food?
The rubber meets the road when the fragerance tempts the senses, the taste explodes on the tongue and the smile meets the eye of your server. In the endevour to do things newly are we moving away from the pure, stark naked reality? What is the most vital aspect of any food and beverage experience?

As a chef that has worked front and back of house, every position, every level of service and almost every genre of hospitality, I believe that service is the number one tied with general hygiene of the facility and service worker. I also agree that those trending fads will fade and only the real chefs will survive....or will be pushed out by lack of FDA participation and regulation.
